Enjoy these Peanut Butter Bliss Balls as a healthy snack on the go, for kids lunch boxes or as a delicious smoothie bowl topping. Ingredients 1/2 cup (60g) rolled oats 1/2 tsp (2g) cinnamon powder 1 Tbsp (14g) white chia seeds 1/2 Tbsp (6g) cacao powder 2/3 cup (85g) peanut butter 2 Tbsp (40mL) maple syrup 1/3 cup water Approx 1/2 cup chia seeds to coat Method 1. In a food processor blitz all dry ingredients 2. Add peanut butter and maple syrup. Process until combined.  3. Add chilled water slowly until mixture comes together into a pliable dough.  4. With wet hands roll into balls. Roll in chia seeds to coat.

Layer up your chia pudding with some mango puree and top it off with some finger limes for added extra citrus zing. INGREDIENTS 3 tbsp (1/4 cup) white chia seed  270ml tin of coconut milk  1/2 cup kefir milk (or coconut milk for a dairy-free and vegan option)  4 mango cheeks (frozen and defrosted or fresh) 2-3 finger limes, to serve METHOD In a small bowl, mix together the chia seeds, coconut milk or kefir. Set aside to thicken. Meanwhile, place mango into a food processor or high-speed blender  and puree until smooth. Layer half of the mango puree between 4 glasses. Top with half of the chia pudding mixture. Repeat with remaining mango puree and chia pudding mixture. Serve topped with finger lime. Finger limes are an Australian native citrus fruit that is typically grown in rain forests in QLD and NSW but can grown elsewhere.
