Another meal from Purple Carrot today for dinner... roasted root spring salad with creamy horseradish dressing. This is actually the second meal I’ve cooked today since we lazily ordered pizza last night. 😋

This dynamic and wild combo is delish! Lentils are even buried in there on the bottom. Why do I always forget roasting vegetables is so easy and amazing?

When I first found out I celiac, I used Purple Carrot meal delivery for a couple of months. I liked it because it took the stress out of thinking of what to cook for dinner since I was still learning the ropes about what was gluten-free or not. ⁣⠀

I loved this a lot, the food was fresh, I tried different recipes inspired from countries around the world 🌎 using vegetables that I never would have thought of before, and included vegetables that I would have never thought of using.

Purple Carrot really helped me learn how to cook for myself. ⁣

So good! Thank you so much Purple Carrot!

Creamy tomato soup! It has cashews, shallot, garlic and coconut milk blended with Parmesan cheese on top. Then, I changed things up and put the hemp seeds and sunflower seeds on top.

Instead of mashed avocado (it was still too hard), I put coconut oil, sea salt and garlic on the ancient grain roll. 😙
